Simplicity is the spice of life!

Summer is the season of celebrations, at least in my my family. With half of my family celebrating birthdays in the summer, there's always a party to host or attend. My mom always made dessert so easy: fruit salads, fruit bowls (before açaí was a thing), fruit soups, trifles, parfaits, you name it. I tend to do the same. If I don't have a Rawfully Delish treats available, I opt in for an easy fix. Here are some of my personal go-to's for a quick, nutritious and delicious summer dessert you can whip up when the guests are at the door!


Quick coconut yogurt:

  • 2 cups coconut meat

  • 3 tablespoons honey (or sweetener of your choice)

  • 2 teaspoons lemon juice

  • Pinch salt

  1. Blend all ingredients in a high-speed blender.

  2. Refrigerate until ready to use.

This easy coconut yogurt can be:

  • flavored with an extract of your choice;

  • mixed with papaya;

  • mixed with raspberries, strawberries and mint;

  • layered with avocado and mangoes (yum!)




Easy custard:

  • 1​ ​cup​ ​fresh​ ​mango

  • Pinch​ ​salt

  • 1⁄2​ ​cup​ ​almond​ ​milk

  • 3​ ​teaspoons​ ​xylitol (or sweetener of your choice)

  • 1​ ​teaspoon​ ​vanilla​ ​extract

  • 1⁄4​ ​teaspoon​ ​cinnamon

1. Blend until smooth in a high-speed blender.

The custard pairs well with bananas, or fresh pineapple and mango. Optionally, add some nuts for a crunch. Serve in a bowl, or a martini glass, if feeling fancy ;)




Lemon Cream:

  • 1 cup macadamias (soaked in hot water for 15 min prior, strained)

  • 1⁄2 cup water

  • Pinch salt

  • 3 tablespoons lemon juice

  • 3 tablespoons monk fruit


  1. Blend all ingredients in a high-speed blender until smooth.

  2. Serve with a fruit salad of your choice. Serve with berries to stay in keto! :)
